Recovery & Remodel #1

There was a leak. A small leak, but it went undetected for a while. I found the 'tip of the iceberg' of the problem on July 14, 2007. Water seeping up through the wood floor, and warped & swollen wood. Not good. We were just allowed back in to start our rebuild Friday August 3, 2007.
What took so long? Well, first the company that clears the flood damage came in, tore up 1/2 the floor and setup dehumidifiers. Then mold was found (a bad thing since my wife and at least 2 of my kids are allergic, and it aggravates their asthma), so they had to take samples, send them to the lab, scrub the air, tear out most of the kitchen and part of the living room, chemically treat the infected areas, then re-sample the area.
So, now I am left with a kitchen torn to the studs, and no appliances, 1/2 the living room torn to the studs, no flooring throughout and a really cool plastic contamination wall blocking off those rooms.
Here is the status today: I, my Wife & 8 children are homeless. (Technically we can sleep at our house, but we have no kitchen or living room.) We have to replace all the kitchen cabinets, the counter top, and because to the age of the house- we have to replace much of the electrical, and the electrical panel, much of the plumbing, the floor and the appliances. Wow.
We are a smidge overwhelmed (and under funded). We are trying to strategerize how to proceed. Finding a plumber, electrician, cabinet installer, appliance installer, .... and so on...
Do you have any advice? Do you have an experience in rebuilding/remodeling a kitchen?
